Meghalaya Style Red Fish Curry

Ingredients:
Rohu River Fish (chopped and sliced)
Onion (chopped) – a bowl
Tomatoes (chopped) – a bowl
Spring Onions (chopped) – a bowl
Coriander (chopped) – a small bowl
Pahari Roots’ Lakadong turmeric powder – 1 ½ Tbsp
Pahari Roots’ Meghalaya Chilli powder – 1 Tbsp
Salt – to taste
Method:
Mix 1 Tbsp turmeric powder and a salt well onto the fish. Let it rest and marinate for 2 minutes
Take a small bowl of oil and heat the pan. Add oil to pan on high flame and heat till oil slightly smoky
Lower the flame and add the fish. Increase the flame again for 1 minute and then reduce again ( This helps the fish not stick to the pan).
Repeat the process and take it out once cooked and fried on both sides.
In a fresh pan add a small bowl of oil. Add the onions and let it simmer till transparent.
Add ½ turmeric powder and 1 tbsp chilli powder. Stir to release flavour.
Add tomatoes. Add ½ tsp salt to cook. Simmer with lid till tomatoes soften.
Add a jug of water. Add more salt to taste. Bring the gravy to boil.
Now add the fried fish to the gravy & Simmer with the lid. Lastly add spring onions and coriander.
Your Meghalaya Fish Curry is ready!
