How to cook plain: Similar to Basmati Rice
Assamese Joha Rice Pulao Recipe
400mg Joha rice
2 big-sized onions, finely sliced
Finely sliced carrots (as per preference)
Cashew nuts and raisins (as per preference)
Bay leaves, cloves, cinnamon, and cardamom (2-3 pieces each)
1 tablespoon salt
3/4 tablespoon pure ghee
Heat oil in a pressure cooker and add bay leaves, cloves, cinnamon, and cardamom.
Sauté the onions and vegetables until slightly fried.
Add salt and mix in the rice, stirring well until it is lightly browned.
Add dry fruits, then pour water to a level about 1 inch above the ingredients (measured by the index finger).
Mix in the ghee, stir well, and close the pressure cooker. Cook for only 1 whistle.
Allow the cooker to cool naturally without opening the lid.
The tasty and healthy Joha rice is now ready to be served.
