Magic Rice known locally as Komal Saul/ Boka Saul (translating to “soft rice”). A traditional rice of Assam, this is a breakfast staple, enjoyed with something savoury or as a dessert with cream and jaggery.

First sown by June end, this special variety of Assamese rice is often referred to as ‘magic rice’. This Rice is an indigenous Instant Rice variety that is pre-cooked and sun-dried and hence needs much lesser cooking time. Zero-fuel needed. Just soak it in water and watch the magic happen!

Recipe

Komal Saul Jolpaan Recipe

 

Ingredients:

 

  • Kumal Saul rice – 50 grams
  • Curd – 2 tablespoons
  • Jaggery – 1 teaspoon
  • Normal/lukewarm water – A glass

 

Instructions:

 

  • Soak 50 grams of Kumal Saul rice in water for half an hour. If you’re in a hurry, you can soak the rice for 15 minutes in lukewarm water.

 

  • After soaking, drain the rice and transfer it to a serving bowl.

 

  • Pour 2 tablespoons of curd or milk over the rice, as desired, and sprinkle it with 1 teaspoon of jaggery.

 

  • Serve the dish instantly to enjoy this traditional breakfast of Assam.
